Taco Salad

Ingredients:

- 1lb ground turkey or beef
- 1/4 cup salsa
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1/2 purple onion, diced
- 1 bell pepper, diced
- 1 roma tomato, diced
- 1 bunch of green leaf lettuce
- Homemade taco seasoning
- 1 T chili powder
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1-1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp dried oregano
- Cilantro lime dressing
- 1 cup plain greek yogurt
- 2 T cilantro, chopped (to taste)
- Juice of 1 lime
- 1 tsp ground cumin
Instructions:

- Brown meat in skillet and drain if necessary. Add homemade taco seasoning, or your favorite packet and stir in salsa. Cook over low-medium heat for another 5-10 min.
- Stir in corn, black beans, onion, and bell pepper.
- Put a heavy handful of lettuce into meal prep containers, and evenly top with meat mixture.
- Combine yogurt, cilantro, lime juice, and ground cumin. Dollop on top of salads. Refrigerate until ready to eat.
