Taco Salad

Ingredients:

  • 1lb ground turkey or beef
  • 1/4 cup salsa
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1/2 purple onion, diced
  • 1 bell pepper, diced
  • 1 roma tomato, diced
  • 1 bunch of green leaf lettuce
  • Homemade taco seasoning
  • 1 T chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1-1/2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp dried oregano
  • Cilantro lime dressing
  • 1 cup plain greek yogurt
  • 2 T cilantro, chopped (to taste)
  • Juice of 1 lime
  • 1 tsp ground cumin


Instructions:

  1. Brown meat in skillet and drain if necessary. Add homemade taco seasoning, or your favorite packet and stir in salsa. Cook over low-medium heat for another 5-10 min.
  2. Stir in corn, black beans, onion, and bell pepper.
  3. Put a heavy handful of lettuce into meal prep containers, and evenly top with meat mixture.
  4. Combine yogurt, cilantro, lime juice, and ground cumin. Dollop on top of salads. Refrigerate until ready to eat.
